
Raise your hand if you never quite knew what the difference between a morning glory muffin and a carrot muffin is (my hand is raised). Turns out apple is a big part of what makes a morning glorry muffin special, but honestly, chopping apples into small pieces doesn’t always have the payoff I’m hoping for in cakes. I took the lazier route and tried substituting applesauce and I think it worked quite well. Also, no one will miss the apple chunks when you’ve covered the bundt in honey butter, and that’s a fact/

Muffin
- One box Carrot Cake Mix
- 3 large eggs
- 1/2 cup raisins
- 1 cup hot water
- 1/2 cup unsweetened applesauce
- 1/2 cup crushed pineapple
- 1/2 cup flaked coconut
- 1/2 cup walnuts or pecans, chopped
- 1 teaspoon cinnamon
Honey Butter Icing
- ¾ cup butter, room temperature
- ¼ cup honey
Bundt Instructions
Step 1
Preheat oven to 350° and prep your bundt with Bundt Gunk or non-stick spray.
Step 2
Your cake mix may come with a pack of dried carrots and raisins, if it does, put it aside for now.
Step 3
In a large mixing bowl, or standup mixer, combine the eggs, applesauce, and pineapple. Make sure they are mixed well. Add your pack of carrots and raisins (if your box mix came with this and your raisins and mix together for maximum of 45 seconds. It’s ok to have a few flour streaks at this point as there are still some things to mix in.
Step 4
Add the nuts, coconut, and cinnamon and mix until just combined. Pour the batter into your bundt pan and start checking at 30 minutes to see if it’s done (not all bundt pans are created equal!).
Step 5
Oncer the center of the bundt bounces back when lightly pressed, your giant muffin is done. Take it out of the oven and let it sit for 15 minutes.
Step 6
At the 15 minute mark, invert it onto the serving platter and let it cool completely.
Step 7
While your cake is cooling, combine the butter and the honey for your “frosting”. However you want to get this stuff onto your cooled cake is fine. I piped mine into my bundt grooves, but you could also heat it slightly and use it more like a glaze.
Honey Butter Icing
Step 1
Melt chips and butter in microwave for one minute. Stir. Melt in 10 second increments until smooth.
Step 2
Transfer melted chips and butter to a mixing bowl. Add vanilla.
Step 3
Using a hand-held mixer (you can also use a stand mixer), alternate the powdered sugar and milk until it’s all combined and you have the consistency you want.
