Prep pan

Muffin

  • One box orange cake mix
  • 3.4 oz package of instant vanilla pudding
  • 4 eggs
  • 1/2 cup of vegetable oil
  • 2/3 cup of water
  • Juice from 1.5 lemons
  • 1/4 cup of tequilla
  • 2 tablespoons triple sec
  •

Glaze

  • 1 cup of powdered sugar
  • 1 tablespoon of tequilla
  • 2 tablespoons of triple sec
  • 2 tablespoons of lime juice

Bundt Instructions

Step 1

Preheat oven to 350° and prep your bundt with Bundt Gunk or non-stick spray.

Step 2

In a large bowl, beat together the cake mix, pudding mix, eggs, oil, water, lime juice, 1/4 cup of tequila, and two tablespoons of triple sec. Don’t over mix! You don’t want a dry margarita!

Step 3

Pour the batter into your prepped bundt pan. Check at 40 minutes. You’ll know it’s done when you lightly press your finger into the bundt and it bounces back.

Step 4

Let your bundt rest for 15 minutes then invert on to baking rack while you make the glaze.

Step 5

Oncer the center of the bundt bounces back when lightly pressed, your giant muffin is done. Take it out of the oven and let it sit for 15 minutes.

Margarita Glaze

Step 1

Combine all of the glaze ingredients well. You’ll want it as smooth as possible. While the cake is still warm, pour the glaze over it. Decorate as you’d like.
