Nobody puts this bundt in a corner! Besides Swayze’s infamous line at the end of the movie the perhaps next most beloved line to quote from Dirty Dancing is “I carried a watermelon”. This watermelon bundt is easy to make, fun to slice, and just like Baby and Johnny at first glance you wouldn’t think that lime and strawberry rice krispy treats go together, but they really do. Ingredients
- 1 stick (1/2 cup) of butter, divided in two equal parts
- 1 10.5 oz bag of mini marshmallows, divided in two equal parts
- 1 tsp vanilla extract, divided in two equal parts
- 6 cups of rice krispy cereal, divided in two equal parts
- Half of a 1.5 oz package of lime gelatin
- Half of a 1.5 oz package of strawberry (or watermelon if you can actually find it) gelatin
- Green food coloring
- Pink food coloring
- 1 cup of chocolate chips
- Non-stick spray.
Cake Instructions
Step 1
In a saucepan, melt one half of the butter over low heat. Add one-half of the marshmallows and leave untouched for 30 seconds. Stir until melted. Add one-half of the vanilla extract, the green food coloring, and the half package of lime gelatin (discard the remaining half of the lime gelatin unless you have another use for it). Mix in one half (so three cups) of the rice krispy cereal.
Step 2
Spray your bundt pan with non-stick spray. Spray your hands too! Press the lime rice krispy treats into the bundt so that you’re lining it with green. There should be a ½ inch of green rice krispy covering the inside of the pan. You’ll have trench going around the middle that you will fill with the strawberry krispy treats.
Step 3
In a saucepan, melt the remaining half of the butter over low heat. Add the remaining marshmallows and leave untouched for 30 seconds. Stir until melted. Add the remaining vanilla extract, the pink food coloring, and the half package of strawberry gelatin (discard the remaining half of the strawberry gelatin unless you have another use for it). Let cool slightly before mixing in the chocolate chips (you don’t want them to melt). Mix in the remaining one half (so three cups) of the rice krispy cereal.
Step 4
Press the pink mixture into the bundt pan, filling the trench.
Step 5
Firmly press down the contents of the pan to make sure it is level.
Step 6
Chill in the fridge for one hour before flipping out of the pan.
Step 7
Hoist your bundt in the air like how Johnny lifts Baby in the final dance scene.
