Deep dish pizza, hot dogs, and Twinkies…sure, a lot of iconic foods have come out of Chicago. If you ask me, nothing rivals Chicago Mix Popcorn. Half cheese, half caramel; it’s addictive stuff. And lucky for us it’s easy to replicate with just a few ingredients and a bundt pan. It’s a sweet (and salty!) treat to bring to a friend that may be missing their hometown.

Ingredients

  • 10 tbsp unsalted butter
  • 20 oz mini marshmallows
  • 10 oz chewy Werthers caramels 
  • 3/4 tsp salt 
  • Enough cheesy popcorn to fill bundt pan

Instructions

Step 1

Prepare your bundt pan by lining it with cling wrap.  Set aside.

Step 2

Add marshmallows, butter, cut-up caramels, and salt in a large pot over medium heat. Stir continuously.

Step 3

Once everything is melted and mixed, remove from heat and add the cheesy popcorn. Continue mixing until thoroughly blended.

Step 4

Pour the popcorn mixture into the prepared bundt pan. Spray a small amount of cooking spray onto your clean hands and gently press the mixture into the pan. Be careful not to press it too tightly into the pan or you may crush the popcorn. Try to make sure that it’s evenly distributed so that when you invert the bundt it sits evenly.
