It doesn’t get any better than this. Or should I say it doesn’t get any FETA than this. Because food puns are the best puns, yes? I brought this bundt to a New Years Eve Party as an appetizer and everyone seemed to love it even though it was place next to the cocktail shrimp. And we all know you don’t want your dish next to the cocktail shrimp because then you’re basically the guy that had to follow the Beetles. It’s tough real estate. It was great right out of the oven all melty, and just as good a little later when it wasn’t as melty.

Prep pan
- Puff Pastry, one box of two packages
- Feta Crumbles
- Crème Fraiche
- Green Olives, Sliced
- Black Olives, Sliced
- Red Pepper, Chopped
- Shredded Cheese, any type you like
Instructions
Step 1
Set out your puff pastry to come to room temperature (about an hour).
Step 2
Preheat your oven to 350° and prep your 8-cup bundt with olive oil, melted butter, or non-stick spray, whichever you prefer. If you don’t have an 8-cup bundt pan, you will need more puff pastry.
Step 3
With your first sheet of puff pastry, use a ruler to mark 1” increments along one of the longer sides. Mark the other side at 1” increments, so that the second set of increments falls in between the first set. With the ruler and a pizza wheel, or knife, slice the puff pastry into long triangles by connecting the ruler at opposing increments. Repeat this with the second puff pastry sheets. You’ll end up with a lot of long triangles.
Step 4
Place all of the triangles on the inside of the bundt by placing the wide end of the triangle on the outside of the bundt and letting 1” of it hang over the sides. Let the puff pastry overlap a bit so that the inside of the pan is totally covered in puff pastry and you can’t see the pan beneath. You should have a one-inch overlap going around the outside of the pan and the tip of the pastry should go all the way up the funnel. It’s ok if the narrow tip of your puff pastry overlaps at the top of the funnel as well.
Step 5
With a pastry brush, add a layer of crème fraiche to the inside of your bundt. Use as much or as little as you’d like. There’s no wrong way. Sprinkle Salt and pepper over your crème fraiche layer.
Step 6
Add a layer of green olives and a layer of black olives. Again, use as many or as few as you’d like. It will turn out to be delicious no matter how you customize it.
Step 7
Next comes a layer of feta cheese crumbles, or feta cubes if you don’t have crumbles.
Step 8
Add a layer of red peppers.
Step 9
Sprinkle a layer of your shredded cheese. I used an Italian blend, but you can use whatever cheese you have on hand. Use as much or as little as you’d like (hint: I always regret not adding more).
Step 10
Fold down all of the overlapping puff pastry to reinforce the bottom of the bundt.
Step 11
Brush the bottom of the bundt with melted butter.
Step 12
Bake until golden brown, it should take about 20-25 minutes. Let rest for 15 minutes than invert on to your serving plate.
