bundt-cake peanut butter fudge Cake

This cake is so good I dropped it in the middle of the street and my friends and I still ate it. There isn’t a review more glowing than that.

Prep pan

For Peanut Butter Cake

  • 1 box yellow cake mix
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 cup cake flour, or all purpose flour
  • 1 cup creamy peanut butter
  • 1 ½ cups water
  • 1 tablespoon vegetable oil
  • 3 eggs
  • 1 cup of peanut butter chips

Peanut Butter Fudge Frosting 

  • ½ cup butter
  • ⅔ cup creamy peanut butter
  • 6 tablespoons milk {I used 1%}
  • 2 ½ cups powdered sugar
  • 1 teaspoon vanilla extract

Peanut Butter Cake Instructions 

Step 1

Preheat oven to 350° and prep your bundt pan with Bundt Gunk or spray with cake release spray.​

Step 2

In large bowl, add peanut butter, water, oil, and eggs one at a time, beating well before another egg is added.

Step 3

In medium bowl, combine cake mix, brown sugar, granulated sugar, and flour. Mix until well combined. Add 1/3 of the dry ingredients into the wet ingredients and mix to combine, ideally with a mixer. Repeat until all dry ingredients are incorporated. For the last addition, do not mix all the way, and be sure to leave flour streaks.

Step 4

Add in the peanut butter chips and mix until batter is just barely combined. Pour the batter into the bundt pan. Tap on the counter to help get the air bubbles out. Use a spoon to make a ditch-like middle ring in the middle of the bundt. This will help it to rise evenly in the pan. Bake for 45-50 minutes or until toothpick inserted in center comes out just barely clean (we’re aiming for a moist cake).  Cool in pan for 10 minutes and then invert onto cake plate and cool in the fridge for one hour.

 

 

Peanut Butter Fudge Frosting Instructions

Step 1

Once the cake is cooled, add the butter, peanut butter and milk to a small pot and melt over medium heat. Whisk until the mixture has melted but not boiling. 

Step 2

Remove from heat, add powdered sugar and whisk until smooth. Add vanilla extract and stir until completely incorporated.

Step 3

Pour frosting over cooled Bundt cake. Let frosting set and serve.
